Why Vegetables Are Not Good For You

One question that is often asked in the realm of the Thermo Diet is “how are vegetables not good for you?”. This question is covered in the Thermo Diet Course, as well as the Thermo Diet Book. In short, cruciferous vegetables contain anti-nutrients such as goitrogens, trypsin inhibitors, and phytic acid that inhibit proper micronutrient absorption and optimal metabolic functioning. Let’s break this down a little further…


What Is A Vegetable?:


First, we must define what a vegetable really is. The working definition of what constitutes a vegetable has been strangely controversial. However, for the purposes of this article we are going to divide the plants we eat into three categories: fruits, vegetables, and tubers - in the following, most widely agreed-upon way: 

  1. A vegetable constitutes the stems and leaves, for example celery and broccoli (stems) and kale, spinach, lettuce (leaves)
  2. A fruit contains seeds (or can act as a seed), and is the structure that develops from the ovaries of a flowering plant: for example, apples, peaches, grapes etc. (all the common ones). One common misconception is that fruits are only sweet. There are actually plenty of savory fruits, for example eggplant, tomatoes, zucchini, avocados, olives, squash, and bell peppers. 
  3. Tubers are roots. They’re so dense in nutrients that they literally sprout and sustain their own plants if left unharvested. Potatoes, sweet potatoes, carrots, turnips, and beets all fall under this category. 

As you can see, most of what the average person would consider a vegetable is actually NOT a vegetable. And all of the ones that most people agree taste good, are not vegetables… they are fruits and tubers. I’ll go more into why I think this is the case, here in a minute.

The Symbiotic Relationship Of Fruits and Humans:

Take a step back and simply examine the facts about the differences between how fruits, vegetables, and tubers grow, and what this tells us about their specific value or purpose in their evolutionary role with humans. 

Fruits are meant to be eaten. First off, they’re jam-packed with nutrients, and if someone was to eat even a small range of different fruits regularly, they would fulfill most if not all of their dietary micronutrient needs. 

Another thing to look at is the fast ripening cycles of fruits. Fruits go through fast growing and ripening cycles, and all contain seeds (most of the seeds/pits are hard and inedible) that regrow the trees/bushes/vines after consumption, even if the human/animal just drops it on the ground haphazardly. This is a really convincing and genius pollination technique that ensures their long term survival, but also their relationship with animals/people that will eat them and spread their seeds for them after. 

Vegetables on the other hand require more careful cultivation and release small amounts of bitter toxins as a defense mechanism against being eaten by animals/insects... quite the opposite of fruits. Vegetables have developed these defense systems to NOT be eaten by insects or other animals. While the leaves and stems of certain plants do contain nutrients, they’re not necessarily the best sources of those nutrients for humans to consume. They contain almost zero calories, which evolutionarily speaking is a downside, and the human stomach doesn’t have much of a capacity for massive leaf or stem consumption due to the high load of fiber, whereas other species of mammals have developed stomach systems, like that of grazing cows, that are meant to be able to handle massive all-day-long consumption of grasses, stems, and leaves. 

It does not make any evolutionary sense for a human to NEED to consume the leaves or stems of certain plants in order to be healthy. The low caloric density coupled with high fiber and non-exclusive nutrients all point to a reasonable conclusion that humans do not need to consume vegetables - they are likely, in fact, more of a luxury in today’s modern world, but most definitely not necessary.

Now let’s consider tubers. Tubers are roots that are so nutritious they will sprout their own plants, and feed those plants with their nutrients. Tubers gather nutrients from the soil around them. Hell, you don’t even have to plant a tuber in the ground for it to grow… if you leave a potato out on the kitchen counter, for example, it will sprout without water or outside nutrition. Tubers also have a generally very appealing taste to humans and other animals. The starchy carbohydrates are easily digested when cooked and also contain prebiotic fiber which is great for human intestinal flora.

Fruits vs. Tubers vs. Vegetables:

So considering even what we’ve just talked about, I can pretty confidently conclude that vegetables, while they may be nutritious, aren’t necessary to be healthy, if you’re consuming the arguably more nutrient- and energy-dense fruits and tubers. 

I say this mostly because I know a lot of people who hate vegetables, yet they carry around some kind of ridiculous guilt about not eating them regularly. This guilt isn’t necessary. You can be extremely healthy by getting your nutrients from fruits and tubers and you’ll live to a ripe old age without ever eating another bitter leaf of kale again. 

In fact, since we’re on the topic of kale, I’d like to point something important out to you.

Kale is not fit for human consumption, yet people have been swindled into thinking it’s healthy. 

In fact, the kale fad has done more harm than good, and in such an underhanded way that most people won’t even realize it’s the kale that is giving them issues. 


Well let’s examine some facts about kale…

Kale, far before being widely consumed by sheeple, was consumed by actual sheep… the kind that graze around in a field. Farmers were feeding kale to their sheep as an alternate food source, yet they started to realize that lambs were being born with goiter (a swollen and poorly functioning thyroid gland.)

Researchers experimented with kale on sheep and rabbits with disturbing results. Turns out kale does contain a goitrogen, thiocyanate, which is chemically very similar to deadly cyanide. Some young lambs were stillborn, their brain development stunted by their goiters. The consumption of kale had blocked their thyroid’s ability to function properly even in the presence of proper iodine consumption. With many modern people consuming little iodine, it’s no wonder the instances of hypothyroidism are rising every year. Meanwhile, kale is being turned into every type of junk food imaginable, from PUFA fried kale chips to kale shakes, this anti-thyroid leafy vegetable is going to do some real damage if not exposed. 

Scientists, when they first started studying kale, never considered that humans would someday consider kale a “health food.” Back then it was only food for livestock. But even though people weren’t noshing on kale chips all day, kale managed to poison them. Cows grazing on kale transferred its poisons to their milk, affecting the thyroid development of children who drank it and causing an epidemic of goiter on Tasmania.

Kale is also rich in sulfur and compounds that convert to sulfur, which is the chemical that makes rotten eggs smell putrid. One metabolite of sulfur, S-methylcysteine sulphoxide, is known to cause “kale poisoning” – severe hemolytic anemia, a life-threatening breakdown of red blood cells, in livestock. Poor sulfur digestion is associated with many serious illnesses in humans, though whether it causes them or merely exacerbates them remains to be seen. 

It makes sense that Kale would be dangerous given it evolved in an evolutionary war against those that dare to eat its leaves from aurochs to insects. One powerful weapon it possesses is lectins, which many people now are recognizing as a serious danger to human health, implicated in many autoimmune illnesses and other inflammatory disorders. 

My point in using kale as an example isn’t to scare anybody, it’s merely to point out that the evolutionary role of leaves is not as benign as you may have first considered. Since leaves are constantly exposed to potential predators, the plants develop very effective chemical defense mechanisms against being eaten. This is supported by the fact that about 12%+ of people 12 years and older in the US have hypothyroidism with some sources claiming upwards of 30%. 

Wouldn’t it make more sense to eat something nutritious that will actually make you healthier and needs you to eat it, like fruit?

I’m sure many people will brush this off as not a serious consideration, however, it is something we should consider. 

If we continue to look at the evolutionary importance of human relationships with food sources, the fact that pretty much all children hate vegetables, with no prior preconditioning to them, is really interesting. If something was essential for human health, then why would human children widely despise it so much. And why would we force our kids to eat something like leaves?

If you ask yourself this question, the honest answer is that we tell our kids to eat vegetables because that’s what our parents told us. 

That is not a reasonable argument. 

Children also have peak health. They have boundless energy, imagination, clear skin, and oftentimes perfect eyesight. It’s only after years of eating poorly and subjecting ourselves to stress that we degrade our once perfect health into a state of disease and dysfunction. 

I think this is a fascinating observation, and not one to be brushed off lightly. 

If something is naturally meant to be eaten by humans we should desire to eat it, this is why things like meat, fruits, tubers, and eggs are widely desired by humans from indigenous tribes to first world countries.
